1 jar or 2 cans chickpeas, drained and dried with paper towels

2 Tbsp olive oil

2 tsp each of paprika, cumin, salt, black pepper & white pepper

1 tsp cayenne pepper

2 Tbsp olive oil

2 large or 3 small onions finely diced

2 tsp salt

6 cloves of garlic finely diced

1 chorizo sausage, diced

2 large red/yellow peppers/capsicums or 3 if small

3 Tbsp sweet paprika

1 Tbsp cumin

1 tsp cayenne pepper

2 bay leaves (optional)

1/2 a tube of tomato paste (1/4 cup)

2 cans peeled whole tomatoes and give them the loving they deserve

1 cup olives chopped

1 can drained & rinsed black beans

6 eggs

Sourdough bread toasted

1/2 block feta crushed

1/2 lemon juice
Bunch of torn parsley
Rocket fresh
Oven or Airfryer to 180c
Chickpeas mixed together in bowl and onto a tray in the oven for 20 mins. Shake tray and another 10 mins until crispy
Slowly sauté onion in deep dish fry pan with decent amount of olive oil add salt and peppers
Add crushed/diced garlic, the more the better with chorizo
Add spices & tomato paste and simmer until all softened
Add tomato cans chopped & add chopped olives, black beans and bay leaves
Cook for around 10 mins and should be there but the longer the better
Make little holes in the sauce to crack eggs in (ideally not deep enough to touch base because will overcook the eggs)
Put lid on top & low heat let the eggs get to a forming point (don’t want whites completely cooked as it will keep cooking when you serve so if you think they are close they are done)
Sprinkle some rocket, feta, lemon and parsley on top of whole pan.
Serve with crispy chickpeas & best bread you can find
