Baguette or bread of choice
Tie spices in a muslin cloth or caddy
Place chicken in a large pot with onion, carrots, celery, spice bundle and salt. Cover with water
Bring to a boil, then simmer until cooked through, whole chicken about 20 min per 500g chicken weight (or if breasts total time 30 min)
Turn off heat. Cool chicken in the liquid as long as possible, ideally overnight OR flash cool down in an ice bath like I did (no patience)
Keep the strained liquid as chicken stock for your use in 5 days or freeze
Remove skin and bones. Chop chicken into small-ish pieces
Dry fry almonds until golden. Set aside to cool
In a bowl, mix celery, onion, almonds and parsley
Add chopped chicken and combine
Stir in yogurt and mayo until just moist, not wet or dry (adjust more/less of this mix to your taste)
Serve in a baguette with lettuce, and optional avocado and cut into portions
