


1 kg ground beef mince

1 large (or 2 small) zucchini/courgette, grated and salted for 5 minutes

1 large onion, grated and salted too

1/2 cup breadcrumbs

1 eggs

1 Tbsp seeded mustard

1 Tbsp paprika

1 Tbsp cumin, salt,

1 Tbsp curry powder

1 Tbsp salt

1 Tbsp black pepper

3/4 cup chopped herbs
Grate your zucchini and onion and add to a bowl with 2 pinch salt, let sit for 5 min
Then either using a muslin cloth or just your hands and a colander, squeeze out the juices and set juice aside (spicy cocktail if you dare it)
Add to a LARGE mixing bowl with all other ingredients
Mix using your hands in a motion: in, squeeze, twist until fully combined
Then ball up into either kofta, burgers, rissoles, meatballs and cook how you would normally
For kofta, I would cook in an airfryer for 15 minutes on 200c and serve with pita bread, a simple pickle salad and heaps of tahini x
