2 racks baby back ribs

4 tbsp yellow mustard (2 tbsp per rack)

1/2 cup BBQ rub

1/2 cup apple juice

3 tbsp honey

2 tbsp brown sugar

4 tbsp butter, cut into small pats

1/2 cup BBQ sauce
Preheat your smoker to 250°F.
Remove the membrane from the back of the ribs, pat dry, coat both racks with mustard, and season generously with BBQ rub.
Place the ribs bone side down on the smoker and cook for 2½–3 hours.
Mix the apple juice, honey, and brown sugar together.
Place each rack on a large sheet of foil, pour the mixture over the ribs, add butter pats on top, and wrap tightly.
Return the wrapped ribs to the smoker and cook for 1½–2 hours, or until the meat has pulled back from the bones and a toothpick slides in easily.
Remove the ribs from the foil and increase the smoker temperature to 375°F.
Brush both sides with BBQ sauce and cook for 5 minutes per side.
Rest for 10 minutes, slice between the bones, and serve.
