

1 lb hot Italian sausage

1/2 white onion

3 cloves garlic

1 lb gnocchi

1 tbsp tomato paste

1 tsp red pepper flakes

2/3 cup chicken broth

1 can tomato sauce

1/2 cup heavy cream

2 cups spinach

1/2 cup grated Parmesan cheese, plus more for serving

Salt and pepper to taste
To a hot pan on medium heat, brown the sausage and remove. Add onion and garlic, sauté for three minutes. Add gnocchi, tomato paste, and red pepper flakes. Mix, then add chicken broth, tomato sauce, and heavy cream. Cover and simmer on low for five minutes or until gnocchi is cooked through. Add spinach and Parmesan, then finish with salt and pepper to taste.
