


1 15 oz can chickpeas (drained and rinsed)

1 15 oz can white beans (drained and rinsed)

1 rotisserie chicken shredded

2 large carrots

2 sticks of celery

2 mini cucumbers

1 large red onion

4 tbs chopped green onion

5 oz crumbled blue cheese

1 cup Greek yogurt

1/4 - 1/2 cup buffalo sauce

1 tbs hot honey

1 tsp salt, pepper, garlic powder, onion powder

1 - 2 oz water
Drain and rinse the chickpeas and white beans.
Shred the rotisserie chicken using a mixer or by hand.
Chop the carrots, celery, mini cucumbers, and half of the red onion into small pieces.
In a large bowl, combine the chickpeas, white beans, shredded chicken, chopped vegetables, green onion, and crumbled blue cheese.
In a separate bowl, mix together the Greek yogurt, buffalo sauce, hot honey, salt, pepper, garlic powder, onion powder, and water until smooth.
Pour the dressing over the salad mixture and mix well to combine.
Taste and adjust the seasoning, adding more buffalo sauce if desired.
