Wash the sweet potatoes and slice them about 1/4 inch thick.
Place the sliced sweet potatoes on a baking sheet and drizzle with olive oil.
Sprinkle chili powder, paprika, garlic salt, and black pepper over the sweet potatoes.
Bake in the oven at 425°F for 30 minutes, flipping halfway through.
While the sweet potatoes are baking, prepare the guacamole by mashing together the avocados, diced red onion, diced tomatoes, jalapeño, chopped cilantro, lime juice, and garlic salt.
In a hot pan, add the ground turkey and cook until browned.
Once the turkey is cooked through, add the taco seasoning and a splash of water, stirring to combine.
Once the sweet potatoes are done, layer them with the cooked ground turkey and cheese of choice on top.
Return the layered nachos to the oven at 425°F for 5 minutes, or until the cheese is melted.
Serve with toppings such as iceberg lettuce, diced tomato, red onion, pickled jalapeño, guacamole, Greek yogurt or sour cream, cilantro, and lime.
