

1 cup warm water (110 F)

2 tsp active dry yeast

1 tbs honey or sugar

3- 3 1/2 cups all purpose flour

2 tbs olive oil
1 egg

2 tsp salt

Italian seasoning, to taste

cheddar, to taste

parmesan, to taste
In a bowl, combine 1 cup warm water, 2 teaspoons active dry yeast, and 1 tablespoon honey or sugar. Whisk and let it sit for 10 minutes.
In a mixing bowl, add 3 cups of all-purpose flour, 2 tablespoons olive oil, 1 egg, and 2 teaspoons salt.
Add the yeast mixture to the flour mixture and knead for about 10 minutes.
Transfer the dough to a greased bowl, cover, and let it rest for 1 hour.
After an hour, punch the dough down to release the air and cut it into four equal pieces.
Shape each piece into rectangles and roll them up, tucking the ends in slightly.
Place the shaped rolls onto a baking sheet lined with parchment paper, cover, and let them rest for another 30 minutes.
After 30 minutes, score the tops of the rolls, brush with olive oil, and sprinkle with Italian seasoning and a mixture of cheddar and parmesan cheese.
Bake in the oven at 375°F for about 15 minutes until golden brown.
