4 x 95 g cans tuna, drained

3 tbsp @gevityrx sriracha mayo (can also use regular or kewpie mayo)

1 tbsp sriracha (optional)

1 tsp rice vinegar or lemon juice

4 cups cooked rice (I used brown rice for extra fibre, but white rice is also DELISH)

1 cucumber, sliced

1 carrot, grated

1 cup edamame

4 tbsp soy sauce (sub for coconut aminos for GF)

4 tsp roasted sesame seeds
In a bowl, add the drained tuna, sriracha mayo, sriracha, rice vinegar (or lemon juice) and a generous crack of black pepper. Mix everything together until well combined and creamy. Set aside.
Divide the cooked rice evenly between 4 bowls.
Top each bowl with sliced cucumber, grated carrot and edamame.
Spoon the spicy tuna mixture over the rice.
Drizzle each bowl with soy sauce and sprinkle with roasted sesame seeds.
Serve with a packet of roasted seaweed and enjoy!
