


1 - 1 1/2 lbs chicken breast cutlets

Salt and pepper

Paprika

3 tablespoons butter

1 c orzo

2 cups chicken broth

1/2 c heavy cream

1 Boursin cheese, round

1 c baby spinach

Chopped basil or parsley
Rub the chicken with salt, pepper and paprika.
Melt the butter in a large skillet and cook the chicken on each side until golden and cooked through. Remove and set aside.
Add the orzo to the skillet. Give ut a stir and pour in the chicken broth. Bring to a boil then cover and lower to a simmer. Let it cook until tender about 8-10 minutes.
Pour in the cream and add the Boursin. Stir until creamy and stir in the spinach.
Add the chicken back to the skillet and warm everything together.
Sprinkle with basil.
