


3 large russet potatoes

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper

1/2 pound cooked crumbled bacon

1/4 cup chopped scallions

Sour cream for serving

In a large greased skillet layer the potato slices, cheese, and bacon
Preheat the oven to 400 degrees.
Slice the potatoes into 1/4 inch slices. Add the to a large bowl with the olive oil, paprika, salt, and pepper. Toss to combine.
On a parchment lined baking sheet arrange the potato slices. Transfer to the oven and cook for 20 minutes. Flip and cook for another 20 - 30 minutes or until crispy.
Cook for about 5 - 7 minutes or until cheese has melted.
Serve topped with scallions and sour cream.
