


12 eggs

1/3 c milk

Salt and pepper

3 tablespoons butter

2 cups cheddar jack shredded

10 oz breakfast sausage

1/4 c flour
2 cups half and half

1/2 c milk

8 tortillas 8”
Whisk the eggs and milk and season with salt. Cook in butter until just set.
Brown the sausage in a skillet and the fats have rendered, leaving the fat in the skillet.
Sprinkle with flour and combine with the sausage.
Pour over the half and half and milk and stir until thickened.
Fill each tortilla with the scrambled eggs and cheese and roll up.
Place seam side down in a 9x13 prepared baking dish.
Pour the sausage gravy over top and cover.
Bake at 375 for about 20-25 minutes until bubbling.
