


2 sweet potatoes

1 lb lean ground beef (I used @coloradocraftbeef)

Extra virgin olive oil
Taco/fajita seasoning of choice (I used @spanglishasadero_official)

1 cup finely diced onion

2 tbsp minced garlic

3 - 4 tbsp hot taco sauce

3 - 4 tbsp of honey
(Combine all ingredients) - 1 can of fire-roasted corn (strained)

1 can if black beans (strained and rinsed)

1 cup finely diced red onion

1 finely diced jalapeño (seeds removed)

1 cup finely diced tomatoes
1 bunch fresh cilantro finely chopped

1 tbsp grated garlic

Juice of 1 lime

Salt to taste

Diced avocado

Light sour cream

Pickled red onions

Cotija cheese

Chopped cilantro
Stab the sweet potatoes with a fork a few times on each side then coat in olive oil and salt. Bake in the oven at 400°F for 55-65 minutes or until soft/tender on the inside.
Prepare the corn and black bean salsa then place it in the fridge.
Get a large skillet going over medium-high heat and add in a drizzle of olive oil, the diced onions and garlic. Let sauté for ~3-5 minutes then add in the ground beef. Break it up into chunks and let sear for a few minutes to build some crust. Season and continue breaking up the beef. Once it's about ~75%-80% done, add in the hot sauce and honey. Continue mixing every few minutes until the beef is cooked through and slightly carmelized.
