


1 pound potato gnocchi

1 pound hot Italian sausage

1 tablespoon olive oil

3 cloves garlic, minced

1 small shallot, diced

1/2 teaspoon red pepper flakes

2 tablespoons tomato paste

1/2 cup vodka

1 cup heavy cream

1/2 cup parmesan cheese

Salt and pepper to taste

Fresh basil for topping
Cook the gnocchi according to package directions, then drain.
Heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned, breaking it apart as it cooks. Add the shallot and garlic and cook until softened.
Stir in the red pepper flakes and tomato paste and cook for 1 to 2 minutes until the tomato paste deepens in color. Pour in the vodka and let it simmer for about 2 minutes.
Lower the heat and stir in the heavy cream and parmesan. Season with salt and pepper.
Add the gnocchi to the sauce and toss until coated and glossy. Top with fresh basil and more parmesan before serving. Enjoy!
