


1 lb ground pork

3 cloves garlic, minced

1 tbsp fresh grated ginger

2 tbsp soy sauce

1 tbsp hoisin sauce

1 tbsp sweet chili sauce

1 tbsp sesame oil

1/4 cup green onion

1 tsp sriracha (optional)

1/2 tsp black pepper

8 - 10 small street taco flour tortillas

1 tablespoon neutral oil

Crunchy Slaw

1 cup shredded carrots

1 1/2 cups thinly sliced cucumber

2 green onions, sliced

1/4 cup chopped cilantro

Thai Sesame Dressing

3 tbsp mayonnaise

2 tbsp sweet chili sauce

1 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp sriracha (optional)

1 tsp honey

1 tsp fresh grated ginger

3 cloves garlic, minced

In a bowl, combine the ground pork, garlic, ginger, soy sauce, hoisin, sweet chili sauce, sesame oil, green onion, sriracha, and black pepper. Mix until just combined.
In a small bowl, whisk together all of the dressing ingredients until smooth. Set aside.
Press a thin layer of pork onto each flour tortilla, spreading it almost to the edges.
Heat a large skillet or griddle with oil over medium-high heat. Place each tortilla meat-side down and cook for 3–4 minutes until the pork develops a deep golden crust.
Flip and cook the tortilla side for another 1–2 minutes until lightly crisp.
Toss the cucumber, carrots, green onions, and cilantro with a few spoonful’s of the dressing.
Top each smash taco with the crunchy slaw, drizzle with more dressing, and finish with sesame seeds, extra green onions, cilantro, and a squeeze of fresh lime.
